Mustard-Herb Butter

I love this simple compound butter atop grilled pork chops or tenderloin. Allow it to come to room temperature before using. The butter is also wonderful on steak, poultry, corn on the cob and other vegetables.

1. Place butter in a small bowl and using a spoon in a whisking motion, slowly add other ingredients until desired flavor is achieved.

2. Lay out a sheet of plastic wrap, and add butter in a log shape down its length at the end closest to you. Roll butter into a tube shape, taking care to roll up the plastic with it. Twist ends, and chill until ready to use.

  • 1 stick unsalted butter, room temperature
  • Dijon mustard, to taste
  • Finely chopped fresh herbs such as tarragon, thyme or marjoram
  • Kosher salt, to taste
