Sandy Holmes truly lives her passion. A dietician for Aspen Valley Hospital, Holmes has enjoyed the benefits of a plant-based diet for over a decade. After her friends and family kept asking for her recipes, she began compiling favorites and taking photos, in conjunction with taking a local self-publishing class.
