For years, the turn-of-the-century farmhouse that was home to Mark Fischer’s Six89—the restaurant that put Carbondale on the culinary map—sat vacant. Happily, the space has been reincarnated as The Way Home by a trio of Colorado restaurateurs and chefs (Flip Wise of Open Fire Catering will oversee the kitchen, Lacy Hughes of Silo is general manager and Denver’s Kade Gianinetti of Wayward, American Grind and Method Coffee Roasters is a managing partner). The restaurant showcases local ingredients and housemade products and celebrates the relationships the restaurant team has developed with regional farmers and ranchers over the years. The back lot has been transformed into a community event space with a 100-foot tented bar and stage. Says Wise, “We want to emphasize comfort, not table turnover; if you want to have a bowl of fresh pasta and a glass of rose and hang out for two hours, please do.” Visit The Way Home at 689 Main St. in Carbondale, or call 970.510.5417. The exterior looks familiar, but the interior—and ethos—pay homage to Six89’s dedication to local food and farmers.
