It’s all about the honey for kombucha enthusiast Jacqueline Duba. She discovered jun, a type of kombucha made with honey (rather than cane sugar) and black or green tea, after she developed a postnatal food sensitivity. In 2016, Duba launched Dragonfly Jun in Aspen (the commercial kitchen is in Basalt) and her effervescent, Colorado-honey-sweetened beverages are now available statewide and locally at Clark’s Market, Natural Grocers, HOPS Culture, Spring Café, Jus Aspen, the Aspen Saturday Market and Skip’s Farm To Market in Basalt. The two refreshing flavors—Hibiscus Rose Elderberry and Lemon Ginger Elderflower—are made with green tea and by purchasing them, you’re helping to support the state bee population and small-scale apiaries, as well as doing your body good (kombucha is a potent probiotic that aids digestion and boosts immunity). New flavors coming soon. To order online, visit DragonflyJun.com.
