If you work early morning hours or want to be first in the lift line, Matt Campbell and Drew Scott ask why not start your day with freshly baked biscuits? Campbell launched The Biscuit food truck in early August, with the help of former Downvalley Tavern chef Scott. The duo now serve up variations on fluffy, buttery breakfast biscuits (as well as a token breakfast burrito, biscuit bowls and daily specials) from a purpose-built truck located in the Movieland parking lot in Basalt (there’s a heated tent for seating). From 6:30 to 10:30 a.m, you can fill your belly with a Huevos biscuit, loaded with fried eggs, black beans, chorizo, green chile, avocado and cheese, or a fried chicken sandwich with honey sauce, biscuits and gravy come with grits, another nod to Scott’s Southern heritage. Local artist Chris Erickson created the distinctive truck graphics; java is from Basalt’s Rock Canyon Coffee.
