I like taking my kids foraging—it strengthens their bond with the environment. Since there are some dangerous poisonous berries we have safety rules: They will never pick something without getting an OK from me first.

Serviceberries are high in pectin, which makes them a powerful gelling agent. Using serviceberries allows you to get a great marmalade texture without additional sugar or even pectin powder. If you do not have access to serviceberries, you can use boiled-down apples as your gelling agent.
