Why We Love It: We have only admiration for this brewery located in The Source marketplace. Owner/brewer Chad Yakobson is the master of sours—specifically, saisons and lambics. Small-batch, limited release seasonals celebrate Western Slope fruit and other botanicals; Bourbon Barrel Cherry Origins is akin to drinking a liquid cherry pie with a just-shy-of-puckery finish. Blackberry Dark Origins calls to mind the best bar of chocolate, ever; a dark berry nose is balanced by earthy notes. Purists will love Surette, a crisp, citrusy saison with a funky Brett (aka Brettanomyces, a genus of yeast used in sour ales) finish.
