This Spring

If anyone understands the rhythm of life in Carbondale, it’s Toby Britt. Sure, the 29-year-old is a drummer who was born and raised in the area. Sure, his father Jeff has run the stage at Carbondale’s annual Mountain Fair for decades. And sure, his mother Cathy owns the popular downtown gift store Dancing Colours and his sister Camy is known to many as the town’s unofficial mayor and mascot.

But Britt also knows the people of Carbondale, and last winter he opened The Beat juice bar and café to give them what they want.

Located in a renovated log home at 968 Main St. next door to Dancing Colours, The Beat offers organic, cold-pressed bottled juices with names like Kind of Green (apple, chard, cucumber, lemon and ginger), Le Tigre (grapefruit, carrot, fennel, turmeric and ginger) and The Galapagos (pear, pineapple, cucumber and mint). There’s also Colorado kombucha on tap and a wide selection of organic, loose-leaf teas.

This spring, along with a wrap-around outdoor deck sure to be a prime summer evening hangout spot, Britt plans to introduce a full slate of signature cocktails along with salads and juices sourced partially from his sizeable garden in the back.
