Although Grey Lady owners Ryan Chadwick and Ian Perry want you to come for the food and stay for the bar, it’s perfectly acceptable to belly up immediately. It’s the only bar program in Aspen with cocktails on tap, including the signature Moscow Mule (made with the house-brand Escobar Vodka, made by Woody Creek Distillers) and seasonal offerings like Negronis. “It’s a great medium for getting craft cocktails without having to wait,” says Perry. The bar also offers rotating barrel-aged cocktails made with smokier spirits like whiskey; the signature libations on the abbreviated menu change with the seasons, as well.
