This tart is delicious at room temperature, making it a great picnic dish.

A tart is a great way to use up fresh vegetables when you have an abundance. The dough can be made up to a week in advance and kept in the fridge, or frozen. Slow-cooking the onions allows the natural sugars to caramelize, resulting in a wonderful, intense flavor.
