Blanching dandelion greens in boiling water will remove some of their bitterness.

Dandelion greens are very nutritious: high in calcium, rich in iron and loaded with antioxidants. During summer, the greens are best harvested when they’re young and still tender, with mild flavor. Blanching them in boiling water first will remove some of their bitterness. Be careful not to gather them in areas that have been sprayed or treated with pesticides.
