Mâche is the French name of the salad green Valerianella locusta, also known as corn lettuce or lamb’s lettuce. It has a characteristic nutty flavor, dark green color and velvety texture. The delicate rosettes make a tasty—and attractive—addition to winter salads, and pair particularly well with citrus.
