Spirited Peach Popsicles
Popsicles are always appealing when temperatures soar but spiking the base ingredients with alcohol transforms them into a playful, adults-only treat.
To add visual appeal, thinly slice sections of ripe Palisade peach, or use raspberries; peel and purée the remaining fruit and mix with sparkling rosé, simple syrup or grenadine to taste, plus mint. Other peachy combinations we love: bourbon and mint; gin and lemon verbena; white rum and basil. Try experimenting with delicate liqueurs like St-Germain (elderflower) or Domaine de Canton (ginger) or brewed, sweetened peach tea. Serve between brunch courses as a palate cleanser or as a refreshing finale to a barbecue. Nice to see you again, summer.
