The Western Slope is justly famous for its peaches: luscious orbs that, at peak ripeness, are best eaten standing over a sink. Peaches are just as lovely paired with simple, complementary ingredients that allow their sweetness to shine. Brush halved fruit with extra-virgin olive oil and grill or roast until caramelized, then add a dollop of crème fraîche. Garnish with a drizzle of local honey and fresh herbs like basil, lemon verbena or mint for a delicious ode to summer.
