Seasonal Bite: Beets

The dusky, earthy flavor of roasted beets is balanced and tempered when paired with other traditional cold-weather ingredients like dandelion greens, arugula or radicchio. Drizzle with an aromatic walnut oil and splash of tangy sherry vinegar; season with kosher salt and freshly ground black pepper. Add crumbles of a sweet, creamy blue cheese (try the Jersey milk offering from Durango’s James Ranch) and toasted walnuts, pecans or hazelnuts. Serve with hunks of rustic bread and a light-bodied red wine for a simple, post-snow-day supper.
