Seasonal Bite: Corn

A short growing season doesn’t stop Colorado from producing some of America’s most famous corn. Olathe produces ears so sweet, it’s a crime to cook them. Strip the fresh, milky kernels from the cob and add to a rustic salad of quartered heirloom tomatoes, fresh basil or mint and tangy, soft-ripened goat’s cheese (try De la Chiva Dairy’s Challows). Finish with flaked sea salt and a drizzle of extra-virgin olive oil. More than a mouthful, perhaps, but every bite shouts summer.
