Spring is the ideal season to support farms offering CSAs.

CSAs deliver the farm harvest

Community-supported agriculture (CSA) harvest subscription programs have long been active in our region, matching farmers from the Roaring Fork Valley, Palisade and Paonia with customers in our area. The CSA model is a grassroots network that connects farms in need of operating capital at the onset of a growing season with consumers who invest up front for a share of the harvest. Typically, CSA boxes filled with seasonal produce and, in some cases, artisanal food items, are delivered right to your door each week throughout the growing season.

Here are some of the CSAs that serve our area:

Unlocking a CSA’s treasures

A CSA box is much like a treasure chest: overflowing with precious items. But the bounty is perishable and the amount of food can be overwhelming. Bounty from the Box: The CSA Farm Cookbook by Mi Ae Lipe (Twisted Carrot Publishing), is a guide to help understand and make use of more than 90 different fruits, vegetables and herbs. The book amasses recipes from the kitchens of professional chefs, home cooks, food associations and food bloggers, and includes nutritional and food storage tips. BountyFromTheBox.com
